Braised Pork Brisket

  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 tablespoon garlic clove, minced
  • 1 quart whole milk
  • 2 each bay leaves
  • 1 each lemon, zested
  • 1/2 lemon, juiced
  • 1 1/2 - 2 pounds pork brisket
  • to taste kosher salt
  • to taste fresh ground black pepper


  • 1. Preheat EGG to 325 degrees F, using indirect heat, a plate setter and a stainless steel grate.
  • 2. In a cast iron Dutch oven, place the pork brisket and all the ingredients into it. Cover with the lid.
  • 3. Braise the pork brisket until the internal temperature reaches 160 degrees F. Remove the Dutch oven from the EGG. Remove the pork brisket from the braising liquid and rough chop. Keep the pork brisket hot for service.
  • 4. Strain the braising liquid into a sauce pan and reduce on medium heat, simmer for 5-7 minutes, until the sauce has formed light-brown curds. Serve the sauce hot over the pork brisket.
