Braised Beef Short Ribs

Short ribs are a versatile cut of meat, that can be adapted for any occasion.

Ingredients

  • 3 racks short ribs, trimmed and peeled
  • 2 1/2 lbs. sugar
  • 2 1/2 lbs. salt
  • 2 tablespoons pepper
  • 1 tablespoon thyme
  • 1 tablespoon oregano
  • smoking wood, of choice, if desired
  • 32 ounces beef stock
  • 1 cup red wine, of choice

Directions

  • 1. Combine all of the dry ingredients together to form a rub. Rub the ribs with the dry mixture to form an even, thick coating. Cover and refrigerate at least overnight or up to 3 days.
  • 2. Remove from the refrigerator and rinse the ribs. Preheat the EGG to 350º using indirect heat and the smoking wood. Smoke the ribs for about 1 hour. While the ribs are smoking combine the red wine and the beef stock. Set aside. Remove ribs from the Egg. Add a grill safe pot large enough to fit the ribs with enough room for the stock/wine mixture to completely submerge the ribs. Braise the ribs for 2-3 hours, adding more liquid as needed, until desired texture is achieved. Remove from the Egg and let rest for 20 minutes before serving.
