BLT French Toast

A savory take on the classic French toast.


  • 1 Ciabatta recipe (follow as directed)
  • 6 large eggs, beaten
  • 1/2 cup milk
  • 1 pound bacon slices cooked
  • 6 tablespoons butter
  • 1 1/2 tomatoes, thinly sliced into rings
  • 1 head romaine lettuce, thinly sliced
  • 4 tablespoons mayonnaise
  • 1 each avocado, grilled
  • green onions, green part only, finely sliced for garnish
  • to taste kosher salt
  • to taste fresh ground black pepper


  • 1. Make ciabatta as directed on recipe. Slice and set aside.
  • 2. Preheat EGG to 425 degrees F, using indirect heat.
  • 3. Slice tomatoes, place on baking sheet, drizzle with olive oil, salt and pepper. Roast for 20 minutes or until slightly browned. Remove from EGG and set aside.
  • 4. Whisk together the eggs and milk. Season with salt and black pepper. Dip both sides of each slice of bread in the egg mixutre. Let the bread sit in the mixture, about 2-3 minutes.
  • 5. Place the soaked ciabatta slices on a well greased baking pan and bake on EGG at 425 degrees F for 8-10 minutes, flipping once. Remove from EGG and keep warm.
  • 6. Set up your EGG for direct heat, using a cast iron grate. Keeping temperature at 425 degees F.
  • 7. Grill avocado halves for approximately 2 mintutes on the cut side. Remove from EGG. Let cool slightly. Scoop out the flesh from the skin, small dice and toss with the mayonnaise. Set aside.
  • 8. Take one ciabatta slice, top with romaine, tomato slice, two slices of bacon, and dollop of the avocado-mayonnaise. Repeat with remaining ingredients. Season with kosher salt and fresh ground black pepper. Garnish with green onions and serve.
