Black Beans

These beans make a great side dish or can be added to a variety of dishes!

Ingredients

  • 16 ounces black beans, not dried
  • 1 small onion, peeled and halved
  • 1 clove garlic, chopped
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon cayenne pepper
  • salt to taste
  • 16 ounces chicken stock

Directions

  • 1. Preheat the EGG to 400º using a cast iron grate and direct heat.  Grill the onions until char marks form and the onion begins to caramelize. Remove from the grill and chop finely.
  • 2. In a preheated cast iron dutch oven or pan, combine beans, chicken stock, onion, and garlic, and bring to a simmer. Cover and cook until fragrant. Season with cilantro, cayenne, and salt. Simmer for 5 minutes, and serve.
