Big Green Egg Potatoes

Nutritional Information

These potatoes are tossed in Dizzy Pig rub and roasted until golden and delicious.

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 pounds baking potatoes, peeled and cut into 8 wedges
  • salt and pepper, to taste
  • 1 1/2 tablespoons dizzy dust, or as desired

Directions

  • 1. Toss the potatoes with all of the ingredients. Put in a single layer on a grill safe baking pan. Bake using indirect heat at 450º until tender and golden, about 1 hour. Season to taste and serve.

Variation: For the Brinner class on 6/17/14, we did not use a Dizzy Pig rub, and simply seasoned with salt, pepper, and garlic.
