Beef Brisket

Nutritional Information

This brisket recipe takes a few days to prepare but is worth the wait!


  • 5 pounds beef brisket
  • 2 tablespoons brown sugar
  • 2 tablespoons hot chili powder
  • 2 tablespoons kosher salt
  • 1 tablespoons garlic powder
  • 1 tablespoons onion powder
  • 1 tablespoons black pepper
  • 1 tablespoons cayenne
  • 2 teaspoons dry mustard
  • 2 teaspoons ground cumin
  • hickory wood chunks, as desired
  • BBQ Sauce:
  • 1/2 cup sugar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon granulated garlic
  • 2 teaspoon kosher salt
  • 1 tablespoon black pepper
  • 1/2 cup white vinegar
  • 1 cup molasses
  • 1 cup ketchup
  • 3/4 cup mustard
  • 1/2 teaspoon cayenne


  • 1. Set the brisket on a large sheet of plastic wrap. In a medium bowl combine the brown sugar, chili powder, salt, garlic powder, onion powder, black pepper, cayenne, dry mustard, and cumin thoroughly. Rub the mixture onto the brisket and wrap tightly in the plastic wrap. Place on a baking sheet and let marinate refrigerated for 2 days. Remove the meat from the refrigerator and let come to room temperature.
  • 2. Combine all of the ingredients for the bbq sauce in a sauce pot. Bring to a simmer, season to taste and store until ready to use.
  • 3. Prepare a the Egg with indirect heat at 225 degrees F. Place the brisket on the rack, close the lid, and cook until an instant-read thermometer registers an internal temperature of 185 degrees F., about 1- 1 1/2 hours per pound. Remove the meat from the grill, wrap in foil and let rest for 1-2 hours before carving the meat against the grain. Serve with the bbq sauce.
  • 4. For class on 5/16 & 17/19, we omitted the sauce.
