Beef and Vegetable Potpie with Cheddar Biscuits

This recipe is perfect for any snowy night!


  • 1 large Spanish onion, halved
  • 1/2 lbs carrots, peeled and cut in half
  • 1/2 lbs parsnips, peeled and cut in half
  • Salt and freshly ground pepper
  • 3 lbs ground beef
  • 1 tablespoon chopped thyme
  • 1 tablespoon chopped rosemary
  • 2 cups beef stock or low-sodium broth
  • 1/4 cup flour
  • 10 ounces peas
  • Southern Biscuits:
  • 4 cups flour
  • 1/2 teaspoon baking soda
  • 2 tablespoons baking powder
  • 12 tablespoons crisco
  • 2 cups buttermilk
  • 6 ounces cheddar cheese, shredded


  • 1. Preheat the EGG to 400° using direct heat and a cast iron grate.
  • 2. Grill the onion, carrots and parsnips for 3-4 minutes per side. Chop into 1/2 inch pieces, season with salt and pepper.
  • 3. Convert the EGG to indirect heat, and preheat a cast iron dutch oven sitting directly on the plate setter. Once preheated, add the beef, thyme and rosemary and cook, breaking up the meat with a spoon, until no trace of pink remains and any liquid has evaporated, 10 minutes. Add the vegetables, stir in 1/4 cup of the flour and cook for 2 minutes, coating the vegetables and meat evenly with the flour. Stir in the stock and simmer until thickened, 5 minutes. Stir in the peas and season with salt and pepper.
  • 4. Put the remaining flour, baking soda and powder in a large bowl. Cut in the crisco until the mixture resembles coarse meal. Add 3/4 of the cheddar. Stir in the buttermilk until a smooth dough forms. Roll out dough and cut into desired biscuits. Place on a pan, and bake using indirect heat at 425º for 15-20 minutes or until baked throughout. Top with the cheddar just a few minutes before they are completely done and bake until cheddar melts.
  • 5. Serve the pot pie filling with a biscuit on top and enjoy!
