Banana Bread with Brown Sugar Meringue

The bananas foster makes this dessert even more decadent and delicious.


  • 2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 each large eggs, beaten
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla
  • 1/4 cup buttermilk
  • 3 each medium bananas, very ripe; broken up into large chunks
  • For the Brown Sugar Meringue:
  • 5 ounces brown sugar
  • 1/4 cup water
  • 3 ounces egg whites, at room temperature
  • For the Bananas Foster:
  • 2 ounces unsalted butter,at room temperature
  • 4 ounces brown sugar
  • 1 ounce brandy
  • 1 ounce bourbon
  • 2 each medium bananas


  • 1. For the Banana Bread:
  • 2. Preheat EGG to 350 degrees F using indirect heat. Grease a small disposable aluminum pan and set aside.
  • 3. In a bowl of an electric mixer, combine all the dry ingredients. Add the melted butter, buttermilk and eggs. Using the paddle attachment, mix until thoroughly combined.
  • 4. Fold in the bananas. Pour the bread batter and evenly spread in the pan.
  • 5. Bake on the EGG for 25 minutes, or until a toothpick inserted in the middle of the pan comes out clean. Remove from the EGG and let cool completely. Slice and serve with brown sugar meringue and bananas foster.
  • 6. For the Brown Sugar Meringue:
  • 7. In the bowl of an electric mixer, add the egg whites and set aside.
  • 8. In a small saucepan, combine together the brown sugar and water. On medium heat, bring to a boil. Once the temperature reaches 230 degrees F, begin to whip the egg whites.
  • 9. Bring the brown sugar-water mixture to 240 degree F, remove immediately and slowly drizzle syrup into the egg whites while whipping. Continue to whip until the egg whites reach stiff peaks.
  • 10. For the Bananas Foster:
  • 11. Preheat EGG to 350 degrees F using direct heat. Preheat cast iron skillet once EGG reaches temperature.
  • 12. Add the butter, once melted add the brown sugar. Cook until dissolved. Add the bourbon and brandy. Let cook 1-2 minutes. Add the bananas and let cook 2-3 minutes. Pull off the EGG.
