Bacon and Sweet Potato Hash

Nutritional Information

Sweet potatoes are high in vitamins and minerals and give a nice change to the standard hash.


  • 1 pound jowl bacon, small dice
  • 1 medium onions, chopped
  • 2 1/2 pounds sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1/2 teaspoon chopped fresh thyme
  • salt and pepper, to taste


  • 1. preheat EGG to 375° using indirect heat, placing the rondo on the plate setter. Cook bacon until crisp. Transfer to paper towels, reserving fat in skillet.
  • 2. Add onions, salt, and pepper to skillet and cook, stirring occasionally, until vegetables are softened. Stir in potatoes and cook, covered, stirring occasionally, until potatoes are tender and starting to brown, 10 to 14 minutes. Stir in thyme, bacon, and salt and pepper to taste.
