Backyard Salad

A quick and easy salad that features seasonal fruits.


  • 1 whole fruit, apple, pear, etc, sliced
  • 2 ounces goat cheese, crumbled
  • 4 ounces spring mix
  • 1/4 onion, sliced
  • 3 each Texas Red grapefruits, segmented, juice reserved
  • Dressing:
  • 1/4 cup reserved grapefruit juice
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • to taste kosher salt
  • to taste fresh ground black pepper


  • 1. Dressing:
  • 2. In a bowl, combine all the dressing ingredients and whisk until combined. Season to taste with kosher salt and fresh ground black pepper.
  • 3. In a large salad bowl, combine together the spring mix, sliced fruit, grapefruit segments and onion. Add the dressing and toss to coat. Season to taste with kosher salt and fresh ground black pepper. Garnish with goat cheese crumbles. Serve immediately.
