Au Jus

Nutritional Information

Ideally this recipe is made after you have slow cooked a brisket. You make this sauce with the drippings from the meat. This recipe for Au Jus is made with red wine, and is a perfect use for any open bottles you may have.


  • 2 cups red wine
  • 4 cups beef stock
  • 1 tablespoon chopped fresh herbs
  • 1/2 cup pan drippings from cooking beef


  • 1. In a sauce pot combine the red wine and pan drippings. Cook until reduced, scraping the bottom of the pan with a wooden spoon.
  • 2. Add the stock and cook until reduced by half. Whisk in the herbs and season with salt and pepper, to taste.
