Asian Spare Ribs

Nutritional Information

This rub has a high sugar content giving it a nice, thick bark on the ribs.


  • 1 cup soy sauce
  • 1 cup brown sugar
  • 1 whole orange, zested and juiced
  • 1 tablespoon crushed red pepper
  • 1 tablespoon fresh minced ginger
  • 1 rack spare ribs, peeled
  • For the Sauce:
  • Stink Eye BBQ sauce, to taste
  • hoisin sauce, to taste
  • plum wood, for smoking


  • 1. Combine the ingredients for the marinade. Marinate the ribs overnight.
  • 2. Strain the marinade reserving the liquid. Add hoisin, and bbq sauce until desired thickness and flavor is achieved. Cook until it comes to a boil, then cool to room temperature.
  • 3. Preheat the EGG to 225º using indirect heat. Smoke for 3 hours, then baste with the bbq sauce every half hour until tender, about 2-3 more hours.
