Asian Chicken Wings

These wings are smoked and then grilled, giving them tons of flavor.


  • 4 1/2 pounds chicken wing drumettes, patted dry with paper towels
  • 1 1/2 teaspoons ginger powder
  • 1/8 cup salt
  • For the Sauce:
  • 2 teaspoons vegetable oil
  • 3 cloves garlic, minced
  • 1/2 cup fresh orange juice
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1 cup hoisin sauce
  • 2 tablespoons finely grated orange zest
  • 1/2 cup sriracha, or other hot sauce
  • 1/4 cup honey
  • 1 teaspoon toasted-sesame oil
  • Sliced scallions, for garnish
  • alder wood, for smoking


  • 1. Combine the salt and ginger powder in a bowl toss the wings in the rub and refrigerate 4-8 hours.
  • 2. Combine the remaining ingredients except for the wings in a sauce pot. Reduce until slightly thickened.
  • 3. Preheat the EGG to 225º using indirect heat. Smoke the wings for 1 1/2-2 hours. Convert the egg to 400º using direct heat and a cast iron grate. Grill the wings for 3-4 minutes per side or until cooked throughout. Toss in the sauce and serve.
