Arugula and Pistachio Salad

Nutritional Information

The pepper flavor from the arugula combined with the sweetness from the maple syrup and balsamic vinegar, create a balanced, delicious salad.


  • 1/2 cup toasted pistachios, chopped
  • 2 tablespoons dijon mustard
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons maple syrup, or to taste
  • 6 ounces arugula
  • 3 ounces manchego cheese, shaved


  • 1. Combine maple syrup and dijon in small bowl. Whisk in olive oil; season with salt and pepper. Combine arugula and pistachios in serving bowl. Toss with enough dressing to coat. Sprinkle cheese over salad.

Variation for Pizza Class on 06/22/15 and 06/23/15: Orange Juice Vinaigrette: 1 1/2 ounces orange juice 1 1/2 tablespoons cider vinegar 1/2 tablespoons Dijon mustard 1/4 cup vegetable oil to taste kosher salt to taste fresh ground black pepper Combine all ingredients in a bowl until emulsified. We also added dried cherries, pecans and crumbled goat cheese to the arugula.
