Apple and Carrot Slaw

This slaw has great texture, flavor and is perfect for any hot summer day!


  • 1/2 cup low-fat Greek yogurt
  • 2 tablespoons white wine vinegar
  • 1/2 teaspoon ground cumin
  • kosher salt and black pepper, to taste
  • 3/4 pounds carrots, peeled
  • 2 apples, peeled, halved and cored
  • 1/2 cup raisins
  • 1/4 cup chopped cilantro
  • honey, as desired


  • 1. In a large bowl, whisk together the yogurt, vinegar, cumin and honey. Season to taste with salt and pepper.
  • 2. Cut the carrots into 3- to 4-inch pieces. In a food processor fitted with the grating disk, grate the carrots and apples.
  • 3. Add the carrots, apples, raisins, and cilantro to the yogurt dressing and toss to combine.
  • 4. Marinate for 4 hours or overnight. Serve chilled.
