Seasonal Fruit Cobbler

These apples are topped with a brown butter crumb batter that creates the perfect topping


  • 2 ounces butter, browned, plus more for greasing pan
  • 1/2 cups sugar, for topping
  • 1/8 cup sugar, for fruit, more as needed
  • 1/2 teaspoon cinnamon
  • 1/2 cup self-rising flour
  • 1/2 cup whole milk
  • cornstarch, see note
  • 2 lb. seasonal fruit
  • Chantilly cream, for serving, see recipe salted caramel, for serving


  • 1. *Use cornstarch if using a juicy fruit such as berries or peaches. Use 2 tablespoons per pound of fruit.
  • 2. Preheat the Egg to 350 degrees F using indirect heat. Grease a grill safe baking dish with butter
  • 3. In a medium bowl, whisk the first sugar with the flour and milk. Whisk in the browned butter. Rinse the fruit and pat dry. Sprinkle the second sugar over the fruit and cinnamon (add cornstarch here if using) and adjust sweetness as desired. Pour the fruit in the prepared pan. Pour the batter on top. Bake until golden brown and bubbly, about 1 hour. When 10 minutes of the cooking time remains, sprinkle with a light amount of sugar over the top. Serve with chantilly cream and caramel.
