Ingredients

  • 1 whole pork belly , boneless, skin on about 8 pounds
  • 2 tablespoons Kosher salt
  • 2 tablespoons cracked black pepper
  • 3 tablespoons ground fennel seed
  • 3 tablespoons ground cumin
  • 1 tablespoon crushed red pepper
  • 3 tablespoons thyme, fresh, chopped
  • 12 cloves garlic, minced
  • 4 tablespoons rice flour, this will aid in crisping the skin
  • 4 kosher salt
  • smoking wood of choice
  • 4 pounds red potatoes, diced large
