Pineapple & Lychee Spread

An easy and fresh spread that pairs well with grilled flatbread.


  • 10 ounces pineapple, chopped
  • 10 ounces lychees, drained (reserve some juice), chopped
  • 20 ounces cream cheese (softened)
  • 2 tablespoons lemon zest
  • 5 each green onions (chopped)


  • 1. Peel and core the pineapple. Grill on the cast iron grate at 450ºF until well charred. Small dice the pineapple and place in a bowl with the chopped lychees. In a small bowl, beat cream cheese until smooth. Beat in the pineapple, lemon zest, onions and reserved juice. Cover and chill for 1-1/2 hours.
