Grilled Shallot and Potato Salad

Grilling the potatoes and shallots adds an interesting texture and depth of flavor to any potato salad recipe.


  • 2 lb. Yukon Gold potatoes, scrubbed and cut into ¾-inch chunks
  • 3 tablespoons olive oil
  • 1.5 tsp. kosher salt
  • Freshly ground pepper
  • 2 medium shallots, thinly sliced (about ¼ cup)
  • 2 cloves garlic, roughly chopped
  • 1⁄3 cup sour cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon red wine vinegar
  • 2 tablespoons chopped fresh flat-leaf parsley


  • 1. Preheat Egg to 350ºF with cast iron grate. Slice potatoes and shallots in half and rinse well with water. Place potatoes and shallots on grate cut side down and grill until golden brown. Turn potatoes onto opposite and continue grilling until softened. Dice the shallots small and the potatoes into quarters. Mix remaining ingredients in large mixing bowl and toss with potatoes.
