Ghivech (Romanian Peasant Vegetables)

Nutritional Information

A hearty stewed vegetable. Grill the vegetables ahead of time for better flavor.


  • 48 ounces seasonal vegetables
  • 20 ounces canned tomatoes
  • 2 cups chicken stock
  • 5 cloves garlic
  • 2/3 cup olive oil
  • 2 tablespoons mixed herbs, chopped
  • salt & pepper


  • 1. preheat an Egg to 350.
  • 2. in a hot Dutch oven, cook garlic in olive oil just until it begins to brown; add vegetables, potatoes, tomatoes, and stock; season with salt and pepper
  • 3. top with herbs and bake for about 1 hour, or until the vegetables are tender
