Braised Root Vegetable with Shallots and Bacon

A flavorful crowd pleaser that makes root vegetables into an amazing dish.


  • 4 slices bacon, diced
  • 2 large shallots, finely sliced
  • 1 lb. TURNIPS, or other root vegetables, such as parsnips or beets
  • 4 tablespoons Apple cider vinegar
  • ⅔ cup finely chopped Italian parsley
  • Salt and freshly ground black pepper


  • 1. Render bacon in cast iron pan until crispy. Reserve the bacon and fat separately. Grill your vegetables until you have achieved grill marks on both sides. Dice into 1” pieces. Place vegetables, shallots, bacon fat and vinegar in shallow baking dish covered with foil and, bake for about 20 minutes or until vegetables are tender. Top with bacon and parsley and serve.
