Asian Chicken Thighs

Grilled chicken thighs, finished with a hoisin sauce and accompanied with scratch pickles. Recipe by Brian Kavicky.

Ingredients

  • For the Chicken Thighs:
  • 5 pounds chicken thighs, boneless, skinless, trimmed of excess fat
  • 1 ounce vegetable oil, plus more for brushing
  • 1/4 cup packed light brown sugar
  • 1/4 cup salt
  • 2 tablespoons five spice powder
  • 2 tablespoons garlic powder
  • 1/4 teaspoon white pepper
  • For the Sauce:
  • 1/4 cup vegetable oil
  • 1/8 cup ginger, grated
  • 1/8 cup garlic clove, chopped
  • 1 teaspoon five spice powder
  • 1/4 cup vinegar
  • 1 ounce honey
  • 1 ounce sesame oil
  • 1 1/2 cup hoisin sauce
  • For the Cucumbers:
  • 2 each english cucumbers, seeds removed, thinly sliced
  • 1 cup rice vinegar
  • 1/4 cup honey
  • 2 tablespoons salt
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated

Directions

  • 1. Preheat EGG to 400° for direct heat using a cast iron grate.
  • 2. For the chicken thighs/rub:
  • 3. Combine the first measurement of vegetable oil, the brown sugar, five‐spice powder, salt and white pepper in a bowl. Rub on the chicken. Let sit overnight (8 hours).
  • 4. For the sauce:
  • 5. Meanwhile, heat the vegetable oil in a saucepan over medium heat. Add ginger, the garlic and the five‐spice powder and cook 2 minutes. Add the hoisin sauce, vinegar and honey; cook 1 minute. Remove from the heat and add sesame oil. Cool and place in a squeeze bottle.
  • 6. For the cucumbers:
  • 7. Toss the cucumbers with the 1/2 cup rice vinegar, 1/4 cup honey, 1 teaspoon each sesame oil and ginger, and salt to taste. Let sit overnight.
  • 8. Grill the chicken 3-4 min each side or until the internal temperature reaches 160°. Let Rest for 10 min, slice and serve.
