Arugula and Pomegranate Salad

A bright and peppery salad that goes well with pizza.


  • 4 oz Arugula
  • 1 ea pomegranate , seeded
  • 1/4 cup hazelnuts , toasted
  • 1/4 cup grated parmesan cheese
  • 1/4 cup White Balsamic
  • 1/2 cup olive oil
  • salt and black pepper, to taste


  • 1. Whisk together balsamic, olive oil and about a tsp. salt and pepper. Toss arugula with vinaigrette and adjust seasoning. Top with remaining ingredients and serve immediately.
