The peppers and onions in the recipe can easily be swapped out for other vegetables.
Ingredients
- 4 ounces Potatoes
- 4 ounces Poblano Peppers
- 4 Ounces Onion
- Salt and pepper to taste
- 2 ounces Blended Oil
Method
- Dice potatoes into 1/2 inch cubes then blanch in a medium sauce pan for 20 minutes or until softened but not fully cooked. Remove from water and place on a try to cool.
- Set up egg for direct cooking with a cast iron pan at 400 degrees F.
- Seed the peppers and dice into 1/2 inch cubes. Dice the onion into half inch cubes.
- Once the cast iron is heated, pour in oil and add potatoes. Allow potatoes to brown on one side then add peppers and onions. Cook until peppers and onions have softened. Season then serve.
