Fast and delicious style for burgers cooked on a flat top.
Ingredients
- For The Burger:
- 1 lb. 80/20 ground beef
- 1 lb. lean ground bison
- ½ cup yellow mustard
- ½ cup diced yellow onion
- Kosher salt and freshly ground pepper
- 10 small hamburger buns
- 10 slices on american cheese
- 4 lbs tater tots
- For The Animal Sauce:
- ½ cup ketchup
- ½ cup mayo
- ½ cup yellow mustard
- 1-2 tbsp hot sauce
- Salt and pepper to taste
Method
- Preheat your Flat top to 400F. In a mixing bowl, combine the ground beef and the ground bison. Form 2.5 oz balls (about the size of a golf ball). In a separate bowl combine all the ingredients for the animal sauce. Mix well and set aside.
- Preheat the oven to 425F with the fan on high. Place the tater tots on a tray, preferably with a trivet, and bake for 12-14 mins. Meanwhile, begin cooking the burgers. Place 2 tsp of onion on the grill, place the ball of meat on top of the onion, smash down rather thin (almost paper thin). Repeat with all your patties. Pro tip: Patty Paper keeps them from sticking while pressing the burger.
- Once the burgers start to form a nice crust on one side, remove them from flat top with a thin grill spatula and flip over. Immediately add one slice of American cheese and begin toasting the bun. Place the patty without American cheese on top of the patty with American cheese.
- For the assembly, add yellow mustard to the bottom bun, place burger on, then top bun. Finish with tater tots and the super secret animal sauce.
