Originating in Minnesota, this super cheesy burger is a one-of-a-kind.
Ingredients
- 1 1/4 lbs ground beef
- 1 1/4 lbs ground bison
- 4 ounces smoked cheese curds, or any melty cheese will work
- Salt and pepper
- 8 brioche buns
- 1 yellow onion, sliced thin
- 2 tbsp butter
- 16 thinly sliced pickle spears
Method
- Preheat the Egg to 400 F.
- In a medium sauce pot, add the sliced onions and butter. Cook onions on medium low heat adding water as needed until they are fully cooked and dark in color. 20-30 mins, season with salt.
- Mix the ground beef and bison together in a mixing bowl, using a scale weighing 16 balls at 2.5 ounces each. Place the ball between 2 sheets of patty paper and using a burger press, press down thin. Repeat with all patties. Place .5 ounces of cheese in the center of a patty, cover with another patty and in your hands crimp the edges of the burger sealing the cheese in.
- Place the patties directly on the grill grates and cook for 3-4 mins per side. Toast the buns. Place caramelized onions on the bottom bun, burger patty, then pickles, then top bun. Serve warm and enjoy!
