Homemade Crackers with Herbed Butter

Making crackers is quite easy and they taste much better than the store bought ones.

Ingredients

  1. For The Dough:
  2. 1 ½ cups flour
  3. ½ teaspoon salt
  4. 2 tablespoons olive oil (plus more for brushing over the dough)
  5. ½ cup water
  6. 1 teaspoon lemon juice
  7. 2 tbsp rosemary, fresh chopped
  8. For The Butter:
  9. 6 tbsp unsalted butter, softened
  10. ½ tbsp salt
  11. 3 tbsp parsley, fresh chopped

Method

  1. Place flour in a mixing bowl and make a well in the center. Pour in salt, olive oil, water, lemon juice, and rosemary. Mix well. Dough should come together and make a ball. Add a little more flour if the dough is still sticky.
  2. On a clean floured surface, knead dough for approximately eight minutes, until smooth. Cover the ball of dough with a little olive oil and allow it to rest for 30 minutes.
  3. After the dough has rested, break off a small section (about 1/4 of dough) and proceed to roll out into the thickness of a cracker. Coat dough with a little flour and work on a floured surface to avoid sticking. Once rolled out, cut into desired shape. Place on a cookie sheet and brush each cracker generously with olive oil. Sprinkle with fine grain salt and additional toppings, if desired. You will need to press the toppings into the dough a bit to prevent them from falling off the cracker.
  4. Preheat the Egg to 375 F using indirect heat. Bake for 8 to 10 minutes, or until lightly golden brown. Remove from the grill and serve within a few hours.
  5. Meanwhile, place softened butter in a mixing bowl with a paddle attachment and mix on low speed until butter is nice and airy(about doubled in size) add in salt and parsley. Mix well. Taste and adjust seasoning to your liking. Serve with crackers and enjoy!
