This easy French custard can be created in many different flavors.
Ingredients
- For the Pot De Creme:
- ⅔ cup granulated sugar
- 2 tbsp. all purpose flour
- 1 tbsp. cornstarch
- ¼ tsp salt
- 2 tbsp. cocoa powder
- 2 ½ cups milk
- 2 tbsp. butter
- 1 tsp vanilla extract
- For the Roasted White Chocolate:
- 4 ounces white chocolate
- For the Candied Pistachio:
- 1 each egg whites
- 1 tbsp. sugar
- 2 tsp. brown sugar
- 4 ounces pistachio
- ¼ tsp kosher salt
Method
- For the Pot De Creme: Heat Egg to 350 degrees F and set up for indirect cooking.
- Place a sauce pot on the Egg and put the milk in to bring up to temperature. While the milk is warming combine sugar flour, cornstarch, salt, and cocoa in a mixing bowl and mix together. Measure out butter and vanilla and set aside. Once the milk is beinging to warm up, slowly start whisking in the dry mixture vigorously until it is all add and incorporated. Continue to whisk mixture until it has thickened. Once thickened whisk in vanilla and butter until butter is fully melted. Place custard in a shallow container and cover with plastic or was paper so a skin does not form then, set in a cooler to cool.
- For the Roasted White Chocolate: Place white chocolate in an thin layer on a sheet pan with parchment. Place on the Egg and allow to roast for about 10 minutes or until the chocolate is golden brown. Remove from Egg and allow to cool. Once cooled, you should be able to crush the chocolate into chunks. Set aside for garnish.
- For the Candied Pistachio: Place the egg white in a bowl and whisk until light peaks start to form. Toss the pistachios in the egg whites and coat them thoroughly. Once coated, put sugar, brown sugar, and salt in the bowl. Mix nuts until they are evenly coated with the egg white and sugar mixture. Place pistachios on a lined baking sheet and cook on the egg. The pistachios should take about 10 minutes to cook and you should stir them about half way through. Once golden brown, allow to cool and then roughly chop them and set aside for garnish.
- Once all ingredients are prepared, evenly distribute custard into bowls and top with white chocolate and candies pistachio.
