A new twist on traditional hummus.
Ingredients
- 1/2 lb. Chinese eggplant, skinned and roasted
- 1 teaspoon garlic, chopped
- 1/4 teaspoon cumin
- 2 ounces lemon juice
- 1/2 teaspoon salt
- 1 ounce tahini
- 1 ounce olive oil
- 1 teaspoon fresh parsley, chopped
- Cayenne pepper, to taste
Method
- Combine the roasted eggplant, tahini, garlic, cumin and lemon juice in a food processor; process until smooth. Season with salt and cayenne.
- Spoon the hummus onto a serving platter and smooth the surface. Drizzle the olive oil over the hummus and garnish with the chopped parsley. Serve with warm pita bread that has been cut into quarters.
