Chinese Eggplant Hummus

A new twist on traditional hummus.

Ingredients

  1. 1/2 lb. Chinese eggplant, skinned and roasted
  2. 1 teaspoon garlic, chopped
  3. 1/4 teaspoon cumin
  4. 2 ounces lemon juice
  5. 1/2 teaspoon salt
  6. 1 ounce tahini
  7. 1 ounce olive oil
  8. 1 teaspoon fresh parsley, chopped
  9. Cayenne pepper, to taste

Method

  1. Combine the roasted eggplant, tahini, garlic, cumin and lemon juice in a food processor; process until smooth. Season with salt and cayenne.
  2. Spoon the hummus onto a serving platter and smooth the surface. Drizzle the olive oil over the hummus and garnish with the chopped parsley. Serve with warm pita bread that has been cut into quarters.
